Three Basic salad dishes

Waldorf Salad

A light and refreshing salad, and very simple to make. It can also be made using fresh yogurt for a lighter option to mayonaise.

Ingredients

  • 5 apples cored and diced (not cooking apples)
  • 1 tbsp apple juice
  • 50g Walnuts roughly chopped
  • 50g celery diced
  • 4 tbsp mayonaise

Method

  • Combine all ingredients in a bowl and leave to chill in the fridge for 1-2 hrs.

Creamy coleslaw

A slight creamy twist to a classic salad

Ingredients

  • 1/2 white cabbage finely shredded. (can be grated using a cheese grater if not confident of you knife skills)
  • 2 Carrots fine strips or grated
  • 1/2 onion finely diced.
  • 50ml double cream
  • 3 tbsp mayonaise
  • salt and pepper to taste

Method

  • Combine all the ingredients in a bowl and chill for 1-2hrs

Red cabbage coleslaw

A fantastic alternative to normal coleslaw and in many ways combines elements of both waldorf and coleslaw.

Ingredients

  • 1/2 red cabbage shredded or grated
  • 2 apples cored and diced
  • 25g raisens
  • 3tbsp apple juice
  • 1/2 red onion diced finely
  • 3tbsp mayonaise
  • salt and pepper to taste

Method

  • Soak the raisens in the apple juice and refridgerate for 4-6hrs
  • mix the ingredients into a bowl add the rasien apple mix and combine thoroughly
